Halves boneless chicken breast
1
Lemon
2
Egg Whites
1
Packet ITG Pancake Mix
Salt & Pepper to taste
Lemon Chicken Directions
Preheat oven to 350 degrees
Whisk egg whites and juice of 1/4 lemon in a bowl large enough to dip the chicken
Place pancake mix and seasoning in another bowl
Dip the chicken in the egg white and then the pancake mix
Sauté chicken in a non-stick fry pan until lightly brown on both sides
Place pan in oven until chicken is done
Squeeze desired amount of lemon over chicken and serve immediately
